Time needed

Two hours

Best time

November to January

Good for

Everyone, food lovers

The co-operative mill presses from November to January, and the smell of new oil reaches the whole village. The rest of the year they hold tastings in the old pressing room.

The tasting

Three or four oils in small glasses, warmed in the hand, then tasted with bread and a pinch of salt. You learn to tell a fruity oil from a bitter one, and a fresh one from one that has spent a year in the bottle.

Ask for the empeltre, the local olive. It’s mild and a little sweet, and it’s the oil we cook with.

Buying oil

The mill sells straight from the tank, in tins of two and five litres. It travels well in a suitcase if you wrap it in a jumper.
